Ingredients
- 100g flour
- 50g water
- 1/2 teaspoon baking soda
- 1 tablespoon matcha powder
- 2 eggs
- 80g sugar
- 1 tablespoon honey
- 1 can of anko – red bean paste (250g)
Method
- Sift the flour.
- Combine eggs, sugar, matcha powder and honey in a bowl and mix well.
- Dissolve baking soda in 1 teaspoon of water and add the mixture into the bowl.
- Add the rest of the water and the sifted flour and then mix the ingredients well to make sure that there are no lumps.
- Place the dough in the refrigerator and let it rest for about 30 minutes.
- Heat the frying pan or hot plate and then pour in the dough.
- When bubbles appear on the surface of the pancake, flip it over to cook the other side.
- Finish by putting anko between two Dorayaki pancakes.
