3 Methods to Achieve Fluffy Rice
Rinse
First and foremost, rinse your rice to scrape off the starch. When the starch-coated rice hits boiling water, the starch blooms and turns stick-like, forming large clumps of gummy rice. Wash the uncooked rice with cold water (you’ll notice a film of cloudy water), strain the rice, and repeat this process three more times. A very simple yet essential step is to rinse! If you’re the lazy few that skips this process – seriously, it’s vital.
Ratio
Different brands of rice, the length and width of the pot, how tight or loose the lid all affect how the rice cooks, but ultimately the rice and water ratio affect the rate of absorption. Getting the ratio right is as simple as following this rule:
Generally, for cooking short grain white rice, it is 1 cup of rice to 1 cup of water or 1¼ cups water for long grain white rice.
Rest
The last crucial step is often overlooked. Invest in some patience before you jump straight into your meal. You need to let the rice sit! The resting period is important to achieve an evenly cooked rice, avoiding a firm top and a mushy bottom. Follow these steps:
Remove the rice from heat. Uncover it. Cover it back with a dry, clean folded towel and place the lid back to serve as a tight seal. The towel will absorb excess moisture and prevent condensation from dripping back onto the rice. Let it rest for 15 to 20 minutes.
Make Fluffy Rice step-by-step
Rinse 1 cup white rice with cold water
Drain the rice through a fine mesh sieve and put into a heavy saucepan or your rice cooker pot.
- Add half a teaspoon of salt and 1 cup of water (for short grain white rice)
Swirl, don’t stir, the contents
Bring the mixture to a boil, cover the pot with a tight-fitting lid.
Reduce to low heat for a slight simmer
Let it cook without uncovering the pot for 18 minutes
Remove heat, place towel to cover pan tightly (as described above)
Let the rice sit for a while to firm up.
Fluff rice with a fork.
