Sugar does so much more than add a touch of sweetness to the dish that you’re cooking. It helps to balance out the flavours, and creates a distinctive taste that is unique to foods containing sugar that are seared or fried – a normal reaction that is known as the Maillard reaction.
This is why many stir-fried recipes call for sugar – whether white sugar, brown sugar, or sweet condiments such as soy sauce, jams, or honey. In today’s article, we challenge you to challenge the conventional. If you see a recipe that calls for sugar, try replacing it with honey instead.
Why use honey in stir-fries?
Honey is not only sweet. It is much healthier and without a doubt, delicious. One teaspoon of honey contains not only the types of sugars (simple sugars, fructose and glucose), but also a wide range of plant-based organic molecules that bring added health benefits.
The rich and complex chemical composition of honey allows for the development of unique flavors, ones that are irreplicable when using table sugar alone. Furthermore, honey has lower moisture content, which means that it can absorb excess moisture on the surface of meats. Too much moisture prevents the formation of delicious flavors, and would instead steam the meat instead of stir-frying it.
What is Trigona Honey?
Trigona honey is produced by honey bees of the Trigona species. These are not like the typical bees in honey farms; they do not form neat hexagonal honeycombs. Trigona bees are usually found in the wilderness of the south and central American lowlands, forests and savannas.
Honey from Trigona bees is darker, with a sweet taste and a sour hint of lemon. In Indonesia, you can look for the same type of honey with a different name – ‘kelulut’ honey. You may notice that the honey is similar to the New Zealand Manuka honey. Bees of these regions pollinate the manuka bush. Both variants of honey are high in antioxidants and contain excellent antibacterial properties.
