With salmon, the initial drying of the fish is important and when done properly will make the cooking process a lot easier. A gentle pat down with a paper towel is sufficient, taking care not to agitate too much.
Ideally you want to preheat the oil on medium heat, to ensure the salmon skin heats up immediately as it makes contact. This is to prevent the common issue of having the crispy skin stick to the pan and ruining the dish. Always cook the skin-side first and observe patiently as the heat cooks the fish from the bottom. The last step is to flip the fish and briefly cook the top until it’s done.
