Tip #1 – The perfect wok
Prior to cooking, make sure you have the equipment essentials – including wok that is the correct size! The enemy of chinese stir-frying is often the small wok — especially when it’s crowded with too many ingredients. Lots of vegetables, in a too-small wok, steam rather than fry when cooked. Flavors and textures of steaming and frying are completely different!
Tip #2 – High heat
Stir-fry over the biggest flame you can muster is another key technique! This way you would be able to achieve the iconic fragrance and taste of Chinese stir fry, which comes from high-heat contact between ingredients and metal. If the wok is not hot enough, the food will taste braised, or even steamed!
Tip #3 – Ingredients ready
Once you start stir-frying, things go quickly. It is best to have everything prepared before stir-frying begins, including your ingredients and sauces. Here is a recipe that you can use again and again for any of your Chinese stir fry. Make the sauce once, store it in a container inside the fridge, and you will have your sauce ready every time!
