How to Properly Roasting Duck Preparation Phase

Preparation

As with any other recipe, some preparations must be done before roasting the duck.

First, preheat the oven to 150 degrees Celsius (300 Fahrenheit). This will save you some time if while you’re preparing the duck and waiting for the oven heat up.

Ducks can be prepared either the morning of the serving or the night before, depending on how well you want to cook it. Either way, leave the duck in the refrigerator either uncovered or just draped lightly with wax paper. As the duck chills in the fridge, the skin will dry up, resulting in a crispy texture.

Next, you want to remove any excess fat from the duck’s body and cavities and also cut away the excess skin from these openings you made. These extra skins can later be used to make cracklings by frying them, or if not then just discard the extra skin.

Then you want to rinse the duck and dry it thoroughly. Season the insides of the duck with salt and pepper, and squeeze a dash of lemon as well. To add a bit of aroma, you can tuck in the squeezed lemon inside the duck to let it absorb into the meat as it cooks.

How to Properly Roast the Duck

Roasting the duck

Before roasting the duck, use a sharp knife to prick the skin of the duck all over. This will let the seasonings absorb in the meat. Take precaution when handling the blade, and you also don’t want to prick the skin too deeply.

Once the oven is heated to 150 degrees Celsius, place the duck on a roasting pan breast side down. Roast the breast side for one and a half hours, and then flip to roast the breast side up for another one and a half hour, for a total of three hours.

By the end of the three hours, turn up the oven temperature additionally to 220 degrees Celsius (425 Fahrenheit), and let the duck roast for another thirty minutes. Remove the duck at the end of thirty minutes, and let it sit for another ten minutes.

Serve the delicious roasted duck to your guests!
