Top tip #1: Master the espresso
It is essential that you have established how to make the perfect espresso before moving on to other drinks, as it is the base of the whole drink. If you’re relying on the machine, it either makes good espresso or it doesn’t.
The basic cappuccino roughly consists of 1/3 coffee, 1/3 hot milk, and 1/3 frothed/foamed milk.
A cappuccino in Italy is served in a 6-7 oz. cup, hence they use a single espresso base. The UK uses larger cup sizes, so it is fundamental to multiply the ratio based on the size. For example, a 12oz cup would need a double espresso.
Once you have set the required quantity, start off by preparing the milk.
Top tip #2: Always use fresh, cold milk.
Fill the milk jug by 1/3, as there needs to be enough milk present to be able to instigate the correct foaming motion while avoiding overflow once the milk expands.
Purge the steam arm by turning it on for five seconds. The tip of the steam wand needs to be positioned underneath the surface of the milk, then fully turn on the steam arm.
If you hear a high-pitched sound, you’ve hit the sweet spot.
As the milk froths, lower the jug to keep the tip of the wand just underneath the milk’s surface.
Heat to required temperature, around 40-45°C, then switch to texturing the milk.
Top tip #3: Practice makes perfect
Raise the jug and position the steam wand below the surface. Angle the jug slightly to create a whirlpool-like effect inside the container that will break down bubbles, creating smoother foam.
When your thermometer reads 60°C, you’re good to go.
Finally, shift your attention to the espresso. While the espresso is pouring, lightly swirl the milk in order to force some liquid around for a smooth, glossy finish. Pour the foam into the cup with a slight wiggle and from a low height.
