What is the difference between Peking duck and regular duck?

Peking duck, or Beijing duck as some may call it, is actually not from Beijing. The variety of duck comes from Nanjing, but the name of the duck comes from a particularly famous preparation method founded in Beijing for the Peking Duck dish (北京烤鸭, Beijing Kaoya).

The Nanjing duck variety is slightly different compared to the local Balinese variant that you see in paddy fields. In terms of outer appearance, Nanjing ducks have more feathers, but are shorter or stubbier that resembles thick coats of fur, compared to Indonesian ducks which have longer feathers. Nanjing ducks seem to have shorter necks and have white coats — the ducklings have yellow feathers. Indonesian ducks tend to have a grey-brownish color that they retain after hatching.

The taste difference between Nanjing and regular ducks is more important. Indonesian ducks have a stronger duck fat musk that many Indonesians love. However, Nanjing ducks have a lighter white meat, while the meat of Bebek Kampung of Bali normally has a greyish coloration.

It is important to make the distinction between the two variants, particularly if you open a Chinese or Cantonese restaurant which claims to sell Peking or Cantonese-style roast ducks. It is not rare for someone to be able to tell the difference between the two variants. No seasoning can cover up the distinct duck fat taste that Balinese ducks usually impart.
