Ingredients:
- Dory fish from Puri Pangan Utama
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 55 grams flour
- 55 grams cornstarch
- 1 tsp baking soda
- 1/3 cup water
- Salt and pepper to taste
- Potatoes to make the chips or use frozen French fries
- Vegetable oil for frying
Steps:
- Add the flour, cornstarch, garlic powder, onion powder, salt and pepper, baking soda and water into a bowl to make your batter. Stir evenly until you form a smooth paste.
- Gently pat your dory fish with a kitchen towel to absorb access moisture.
- Sprinkle flour on both sides of the fish, then dip it into your batter mix and make sure it is coated evenly on both sides.
- Heat up about 3 inches of vegetable oil in a deep saucepan until 190°C.
- Lower your dory fish into the hot oil. Fry until the batter is crisp and golden,remember to turn the fillets occasionally. Cook for about 6-8 minutes.
- Once cooked, place your dory fish onto paper towels to soak up access oil.
Cook Your Chips:
- If you’re using frozen potato chips, remember to thaw them before frying or defrost in a microwave.
- If you’re using potatoes.
- Peel and cut your potatoes into thin sticks.
- Boil in salted water for about 3-4 minutes then drain on paper towels.
- Fry in hot oil (approximately 204°C) until golden and crisp, about 5 minutes.
- Once cooked, remove and place on a paper towel-lined plate.
- Serve your fish and chips and enjoy!
