Rice Balls, also known as Onigiri, are made of plain white rice that’s lightly salted and wrapped with seaweed. Warm, cold or at room temperature, they will keep well and will taste good throughout the day.

Here’s everything you need:
- 158 grams white rice
- 2 sheets nori
- ¼ tsp salt
- 8 large shrimps
- 1 cup cooking oil
Ingredients for shrimp batter:
- 2 tbsp + 2 tsp potato starch
- 2 tbsp + 2 tsp cake flour
- ⅛ tsp salt
- ¼ cup water
Ingredients for Tsuyu shrimp sauce:
- ¼ cup Tsuyu concentrate soup base
- ¼ cup water
Method:
- Cook the rice and season with ¼ tsp salt. Set aside to cool but keep it covered to prevent the rice from drying out.
- In a bowl, whisk together your shrimp batter ingredients until well combined. Then add the shrimps and mix well.
- In a small pot set over medium heat, add 1 cup of cooking oil. Make sure the oil is hot before frying – you can use the handle of a wooden spoon or a chopstick to test the oil by placing it in the oil. If the oil starts bubbling, then it’s time to fry.
- Carefully lower one battered shrimp at a time into the hot oil. Cook on each side for 1 minute, until pink and curled. Remove shrimp from hot oil and transfer to a cooling rack or a paper towel-lined plate. Allow the excess oil to drip off.

Now it’s time to make the rice balls:
- Place cling film over a small bowl or a ⅓ measuring cup and pack it full with cooked rice. Twist the ends of the cling film together to shape it into a packed rice ball. Using the corners of your hand, shape it into a triangle. Poke a deep hole at the top of the triangle. Set aside.
- Dip cooked battered shrimp into the sauce, and insert the battered shrimp deep into the rice. The rice ball will break apart here which is normal. Cover the rice ball again with the cling film and shape it back into a triangle.
- Take your nori sheet and tear it into 4 long vertical strips to wrap around your triangle. Place your Seafood Rice Balls into your lunch box and don’t forget to add the Tsuyu sauce!
- Enjoy!
