- 219 gr all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 8 tbsp or 113 gr unsalted butter
- 100 gr sugar
- 50 gr brown sugar
- 2 eggs
- 120 gr sour cream or plain/vanilla yogurt
- 2 tsp pure vanilla extract
- 60 ml fresh milk
- 210g fresh or frozen blueberries
For the topping:
- 100g brown sugar
- 1 teaspoon ground cinnamon
Instructions:
- Preheat the oven to 218°C. Prepare the muffin pan with nonstick spray or use cupcake liners.
- Mix all of the topping ingredients together. Set aside.
- Whisk the flour, baking soda, baking powder, and salt together in a large bowl. Set aside.
- Beat the butter, granulated sugar, and brown sugar together until smooth and creamy. Add the eggs one at a time, beating well.
- Beat in the sour cream and vanilla extract until combined. Add the dry ingredients and milk and beat until no flour pockets remain. Add the blueberries.
- Spoon the batter into liners, filling them all the way to the top. Spoon brown sugar & cinnamon topping on each. Bake for 5 minutes then reduce the oven temperature to 177°C.
- Continue to bake for 18–20 minutes, then transfer to a wire rack.
