What is the history of Ketan rice?
According to Smithsonian Magazine, Ketan rice – also known as sticky, or glutinous rice – has been grown in mainland Southeast Asia for at least 4,000 years. It was developed through selective breeding to create a mutation in its gene that suppresses the formation of a starch called amylose.
Ketan rice is now a primary staple in Laos, and parts of Myanmar, Thailand, Cambodia, and Vietnam. Sticky rice has also migrated north to become an important part of the diet in places like China and Japan.

Ingredients:
- 1 cup Ketan rice
- 1.5-2 cups of water
Instructions:
- Place the Ketan rice in a fine-mesh strainer and rinse thoroughly with cold water until the water runs mostly clear. This removes excess starch that can make the rice mushy.
- Prepare the steamer. Fill a pot with a few inches of water and bring it to a boil. If you don’t have a steamer basket, you can use a colander or heat-resistant sieve placed over the pot.
- Steam the rice for 20-25 minutes. Place the steamer basket over the boiling water, ensuring the water doesn’t touch the rice. Cover the pot tightly with a lid.
- Turn off the heat and let it sit in the steam for an additional 10-15 minutes.
