What’s A Sheet Cake?

Butter Sheet Cake Recipe from Puri Pangan

Ingredients
- Nonstick vegetable oil spray (for the pan)
- 400 g granulated sugar
- 219 g all-purpose flour
- 1 tsp. baking soda
- 177 ml vegetable oil
- 2 large eggs
- 177 ml well-shaken buttermilk
- 2 tsp. salt
- 2 tsp. vanilla extract
Frosting and Assembly
- 2½ sticks Unsalted Butter
- 32 g nonfat dry milk powder
- 85 g heavy cream
- 2 tsp. salt
- 1 tsp. vanilla extract
- 453 g powdered sugar, sifted and divided
- Sprinkles (for decorating)
- Shredded Dairygold Cheddar Cheese
Bake The Cake
- Place a rack in the middle of the oven; preheat to 190 °C. Line the bottom of a 13×9″ metal baking pan with parchment paper. Lightly coat paper and sides of pan with nonstick vegetable oil spray.
- Vigorously whisk granulated sugar, 1 all-purpose flour, and baking soda in a medium bowl to combine.
- Add 2 large eggs, well-shaken buttermilk, salt, and vanilla extract and whisk again just to combine.
- Add dry ingredients and whisk gently until just combined and the batter is smooth. Scrape batter into prepared pan.
- Bake cake until it springs back when gently pressed for about 25–30 minutes. Let the cake cool down for approximately 1 hour. before serving. Peel away parchment; invert cake, right side up, onto a platter.
Make The Frosting
- Cook the unsalted butter in a small skillet over medium-low heat until it begins to foam. Add nonfat dry milk powder and cook, stirring constantly until mixture turns a dark brown, about 5 minutes.
- Remove from heat and immediately add heavy cream, stir vigorously until smooth. Let the brown butter mixture cool for about 30 minutes.
- Using an electric mixer on medium-high speed, beat salt, vanilla extract, and remaining unsalted butter in a medium bowl until smooth and creamy, about 1 minute.
- Add powdered sugar, sifted, and beat, starting on low speed, until well combined, about 1 minute.
- Add brown butter mixture and remaining powdered sugar, sifted, and beat until frosting is light and fluffy for about 2 minutes.
- Spread frosting evenly over the top of the cake, working all the way to the edges.
- Shred the cheddar cheese and sprinkle generously on top of your Butter Sheet Cake.
