Using fat for baking normally comes in the form of butter or margarine that can make or break the batter. Apart from playing a role in the aromatic department, butter can act as a binder between the gluten contained in flour, sugar, milk, and eggs.

Anhydrous Milk Fat

Anhydrous milk fat products, as the name suggests, consist of more or less pure milk fat and no water. They are derived exclusively from milk and/or products obtained from milk utilizing processes which result in almost total removal of water and non-fat solids.

Our Corman Patisy AMF PI-3 contains 99.9% pure butterfat with a 0.1% moisture, whereas a store-bought butter would generally have 82% fat content. A high fat content affects the amount of butter needed in your batter, meaning you could reach 15% reduction than the use of normal butter. This Belgium-made product is a non-chilled butter that can be stored at room temperature and is known for its aromatic scent making it suitable for baking cookies and pastries.

Facts about AMF

  • Demand for butter is lowering due to the growing use of AMF.
  • Must contain at least 99.8% milk fat made from fresh cream or butter.
  • For neutralization of free fatty acids, additives are strictly not allowed.
  • AMF is typically packed in 200-litre drums nitrogen (N2) headspace and can be stored for several months at +4°C.
  • AMF liquidizes at temperatures above 36°C and solidifies below 16-17°C.
  • Convenient and easy to mix with other products when in liquid form. It is used for recombination of various dairy products but it is also used in the chocolate and ice cream manufacturing industries.
  • One field of application where the use of AMF will increase is in “blends” of different fat contents and with mixtures of butter and vegetable oils, to make products with different functional properties.
