A sponge cake is a cake based using flour, usually wheat flour, sugar, butter and eggs, and is sometimes made to rise with baking powder. Great Sponge Cakes have a firm yet lightly-aerated look and when baked are slightly soft to touch.
In some parts of the world a sponge cake is produced using the batter method, while in others the cakes are made using the creaming method – these are known as butter or pound cakes.
Two common English sponge cakes are the multi-layered Victoria sponge cake and the Madeira cake. The use of baking powder enables the sponge to rise higher than cakes made without.
A fun Victoria style sponge cake consists of raspberry jam and whipped double cream or vanilla cream. The jam and cream are put between two sponge cakes with the top of the cake not decorated or iced except for a dusting of icing sugar. Some people make a variation on the Victoria style sponge cake that has raspberry jam as the filling and is coated lightly with caster sugar instead of icing sugar.
